Bok Choy Stir Fry



If you are new to eating leafy green vegetables, bok choy is a gentle introduction to the world of greens. Mild tasting and crunchy, it's a perfect choice for steaming and stirfries.

INGREDIENTS
1 Tbsp. toasted sesame oil
1 carrot, cut into thin matchsticks
1 tsp. minced fresh ginger
1 cup red cabbage, thinly sliced
1 cup broccoli florets
1 bunch bok choy, washed and thinly sliced diagonally
1 cup nappa cabbage, sliced
2 Tbsp. mirin (rice cooking wine)
1 Tbsp. shoyu soy sauce
Vegetable broth
1 Tbsp. toasted black or tan sesame seeds


Heat oil in a large skillet or wok over a medium high flame. Sauté carrots and ginger for 2 minutes. Add red cabbage, broccoli, bok choy and nappa cabbage. Add mirin and shoyu soy sauce. If needed, add a splash of vegetable broth to prevent vegetables from sticking to bottom of pan. Cover and steam until bright and crisp-tender, about 5 minutes. Drain any excess liquid. Toss with sesame seeds and serve.
