Lentil Walnut Pate

Lentils have been a staple in Mediterranean, Middle Eastern and Indian cooking. They're a versatile little bean well suited to pates, dips, spreads, patties, soups and even a meatloaf substitute! This recipe is perfect for parties and entertaining.
INGREDIENTS
2 cups cooked lentils
1/2 cup minced parsley
1 to 2 cloves minced garlic, or 1/4 of a small red onion, minced
1/2 cup toasted walnuts
1 Tbsp. sweet white miso
1 tsp. shoyu soy sauce
2 tsp. balsamic vinegar
1 Tbsp. brown rice syrup
Spring water, to achieve smooth consistency
Place all ingredients in a blender and puree smooth. Adjust seasonings to taste. Serve with crudités or whole grain pita wedges.
