Lentil Burgers

The consistency of cooked lentils, combined with oats, walnuts and bread crumbs makes for a perfect burger and a happy cow.
INGREDIENTS
1 inch piece kombu, soaked 10 minutes and drained
2 cups green lentils, well rinsed
Spring or filtered water
1/2 tsp. sea salt
2 tsp. sesame oil
1/3 cup onion, finely minced
1/3 cup carrot, finely minced
1/3 cup celery, finely minced
1/3 cup minced parsley
2 tsp. shoyu soy sauce
1/2 cup quick cooking oats
1/2 cup walnut meal
1/2 cup whole grain bread crumbs
One of the following oils for frying: Grapeseed, sesame or safflower oil
In a saucepan, place kombu, lentils and water to cover. Boil uncovered 10 minutes. Reduce heat, cover, and simmer on low 30 minutes, until water is nearly evaporated and lentils are soft. Add sea salt and continue to cook 5 minutes more. Transfer lentils to a large glass bowl.
Heat oil in a frying pan over medium heat. Add onion, carrot, celery and a pinch of salt. Saute for 6 minutes or until soft.
Combine cooked vegetables, parsley, shoyu soy sauce, oats, walnut meal and breadcrumbs to lentils. With moist hands, form the lentil mixture into patties.
In a cast iron skillet, heat 1/2 inch of oil of your choice over a medium high flame. When the oil is hot, add burgers and fry several minutes before turning, until they are golden on both sides. Transfer cooked burgers to a plate lined with paper towels. Repeat with remaining burgers. Serve burgers on whole grain buns with your favorite toppings.
