Rice Crispy Treats

Crisp, light and totally yummy, these gelatin-free squares make a satisfying snack for kids and grown ups alike. The bonus is that they're a cinch to make in 15 minutes or less!
INGREDIENTS
1/2 cup brown rice syrup
1/2 cup peanut butter (if substituting almond butter, use 1 Tbsp. less)
Pinch sea salt
3 1/2 cups crispy brown rice cereal
1/2 cup blanched almond slivers
Optional: 1 cup Sunspire dairy free, grain sweetened chocolate chips
In a large saucepan, heat rice syrup, peanut butter and sea salt over low heat until creamy. Place crispy rice cereal and almonds in a large bowl. Add brown rice syrup-peanut butter mixture and stir quickly until coated.
Press into a shallow, square casserole dish. Cool until firm.
If topping with chocolate, melt chips in a double boiler and pour over cooled crispy treats. Spread evenly and smoothly, working quickly before chocolate cools. After chocolate has cooled, cut into squares and enjoy every crunchy bite.
Makes 9 squares
