German Chocolate Cookies



You've heard of the cake. Here's the cookie version! The rich flavor of coconut makes these cookies taste like a guilty indulgence, but coconut is a healthy, cholesterol free fat. So go ahead and enjoy!

DRY
1 cup whole wheat pastry flour
1/2 cup brown rice flour
1/2 cup shredded coconut
1/2 cup unsweetened cocoa powder or carob powder
1 level tsp. baking powder
Pinch sea salt

WET
1/3 cup safflower oil
1/3 cup maple syrup
1/3 cup rice milk

1/2 cup chopped walnuts
1/2 cup grain malt sweetened chocolate or carob chips


Preheat oven to 350° F. Mix dry ingredients together. In a separate bowl, mix oil and syrup together. Blend wet into dry ingredients. Add walnuts and chocolate chips.

Drop large spoonfuls of cookie dough, spaced an inch apart, onto a lightly oiled cookie sheet. Gently flatten with a fork. Bake at 350° F. for 10-15 minutes or until edges are firm to the touch.

Makes 2 dozen
