Tofu Whipped Cream
1/2 block (8 oz.) firm tofu, cubed and steamed 5 minutes
1/4 cup brown rice or maple syrup
1 Tbsp. cashew butter
1/2 tsp. almond extract
1 tsp. vanilla
Place all ingredients in a blender and puree until smooth and creamy. Adjust sweetness level to taste.
Makes 1 1/2 cups
