Cheery Cherry-Pear Crisp



Cherries are loaded with flavonoids, fiber, potassium and traces of vitamins A and C. The antioxidants in cherries help to maintain a youthful appearance and boost natural immunity. Cherries have also been credited with easing arthritis.

INGREDIENTS
4 ripe pears, sliced thinly
1/2 cup dried cherries, soaked in 1/2 cup water 20 minutes
Pinch of sea salt
1/2 tsp. vanilla
1 tsp. arrowroot powder
1/4 cup maple or brown rice syrup

TOPPING
2 cups rolled oats
1/2 cup flour of your choice: whole wheat pastry, garbanzo or brown rice
1/3 cup maple sugar
1 tsp. cinnamon
1/3 cup safflower oil
1 tsp. vanilla


Preheat oven to 350° F. Toss pears and drained cherries with salt, vanilla, arrowroot and rice syrup. Place mixture in a lightly oiled 8 x 8 inch baking dish. In a mixing bowl, blend topping ingredients together. Spread over fruit and bake 40 minutes. Serve warm.
