1. Crispy Gluten-Free Oatmeal Cookies

Who doesn’t like cookies, right? It doesn’t matter if you’re giving these away to kids or adults — anyone would surely love a taste of guilt-free
goodness!

Ingredients:
1 1/2 cups uncooked gluten free rolled oats
3/4 cups all-purpose gluten free flour (I made my own blend of 1/4 cup millet flour, 1/4 cup sorghum flour and 1/4 cup tapioca flour whisked together)
1/4 tsp cinnamon
1/4 tsp baking soda
pinch salt
1/2 cup maple syrup
1/4 cup avocado oil
1/4 tsp vanilla extract
1 Tbsp ground flaxseed
1/2 cup applesauce
1/2 cup raisins or chocolate chips
Directions:
Preheat oven to 375 degrees F.
Mix all ingredients together in a medium bowl.
Place rounded spoonfuls of dough onto a cookie sheet lined with parchment paper. Bake for about 8 minutes, until light golden brown. Remove from oven and let the cookies finish baking on the cookie sheet for about 5 more minutes. Cool completely before storing in a
covered container.
