Looking for a healthy sweet snack that feels like

Looking for a healthy sweet snack that feels like a cookie (but isn’t) and only takes minutes to make?

How about a Rice Crispy Treat? These are sweetened only with brown rice syrup and a little coconut sugar in the carob chips.

Rice Crispy Treats (no refined sugar!)
Makes 9 squares

INGREDIENTS
* 1/2 cup brown rice syrup
* 1/2 cup pumpkin seed butter
* 1/2 teaspoon pure vanilla extract
* Pinch sea salt
* 4 cups brown rice crisp cereal
* 1/2 cup coconut sugar-sweetened carob chips or chocolate chips

INSTRUCTIONS
* In a large size saucepan, combine the brown rice syrup and pumpkin seed butter in a saucepan. Bring to a simmer over medium heat, whisking often.
* Once the mixture has thickened slightly and is a uniform color, remove the saucepan from the heat and stir in the vanilla extract and sea salt.
* Add the cereal to the saucepan and stir until the cereal is evenly coated.
* Stir in the carob chips.
* Lightly oil an 8 x 8-inch baking pan with a little avocado oil. Pour the mixture into the pan and press it firmly into the pan. A piece of parchment paper can be used for this to prevent your hands getting really sticky.
* Let the Rice Crispy Treats sit at room temperature for 30 minutes, or until firm.
* Carefully cut into nine squares.
* Store any leftover bars in a covered glass storage container at room temperature for up to 3 days.

Note: If you like your Rice Crispy Treats thinner, feel free to use a 9 x 12-inch baking pan.
